It's tricky to do, but when Zant does his spin attack in the final phase of his fight, you can counter with your own spin attack to stun him.

Also not sure if you showed this, but there are ways to quickly mount and dismount Ferry. If you mount her from behind, you'll get an instant burst of speed, which is nice. And if you press ZR + A while on Ferry, you'll backflip right off of her, just like in BotW.

The cave is slightly different if you go through it a second time, as some rooms have more enemies. And if you get to the end again, there's a very special cameo waiting for you. Your reward is just more tears, but unlike at the springs you can get them even if you have tears already.

I don't think you showed this off, but you can talk to the Great Fairy at any of the springs after completing the cave. She'll hook you up with more tears, but only if you don't have any already.

Here's a few:
The earliest revision of the North American Wii version had a debug tool left in that allowed you to skip floors in the cave of ordeals by putting out the torches with the boomerang. This was patched out in a later revision, as well as versions in other territories.
