The filling is basically a potsticker or gyoza filling (pork, garlic, ginger, green onions, soy sauce) instead of the usual beef or chicken with taco seasoning. Pretty good! I used this recipe as a guide: www.allrecipes.com/smashed-dump...

I’m so bummed I can’t make the French bread pizzas but I do really like a good peanut butter sandwich on occasion. And I think I’ll have a cocktail too (I can make a cocktail in the dark no problem). 🤪

It’s this one, “20-Minute Mole Sauce.” I also have the recipe for Fonda San Miguel’s mole (which is really really good), but it’s a bit daunting so I haven’t tried making that one yet. I just wanted something that I could maybe make more often.

Ooooo that looks good. Yeah one of my favorite things to do is marinate chicken thighs in a sauce and then roast them in the oven. Tonight I’m making Thai roasted chicken. The marinade recipe is from the Cravings cookbook (Chicken Satay with Peanut Sauce), but I couldn’t find a link for it online.

It’s a meal kit recipe (link below): coat chicken breasts in seasoned flour (flour, salt, pepper, paprika, and garlic powder) and pan-fry in a little oil, until cooked through. Serve with gravy, mashed potatoes, etc. Your WFH lunch sounds amazing! Yum!
