Okay as expected, it’s a little less airy, but far from dense. Definitely more sour. A great loaf! A worthy experiment. I think I’m a little more partial to yesterday’s, but it’s very close.

Looks nice on the outside. I expect the inside will be a little less airy due to the lesser expansion. But we’ll see in a couple hours!

A little early morning bake. Doing a smol experiment. I usuallly cold ferment overnight (this was in for about 16 hours), but I prepped two loaves. Gonna let the other sit in the fridge until tomorrow morning. That’ll be about 40 hours cold ferment. Interested in finding out the effects! #breadsky

My dad loves that dark brown bread they have at like chain steak houses. The almost but not quite pumpernickel stuff. Did a quick recipe test tonight so I can give him some for his birthday on Sunday. Turned out nicely! #breadsky

I tried a mozzarella and Sun-dried tomato loaf. Lamination and Shaping was a mess, so not as much oven spring. Ingredients are not well distributed. Tastes fine, and well-fermented, but definitely this loaf needs work. Not as easy as the jalapeño cheddar one was! #breadsky
