Sadly Bill passed away in 2005 not long after we met. His legacy I see everyday in the orchard. Perhaps apple trees are not Totara but this saying is appropriate. “Kua hinga he tōtara i Te Waonui-a-Tāne" which translates to "A tōtara has fallen in the great forest of Tāne”

Just tried it and I came up with nothing more except the tantalising quote from Adam Wells’ book on perry “[Adam] identified old Parisian treatises from the 19th century that compared English, Swiss, and German perries to Champagne.”These comparisons may have evolved with modern marketing.
