making bootleg kolache (queso fresco in place of tvaroh, cranberry sauce in place of prune jam)
a parchment paper-lined baking pan containing six kolache (three on the top row with cheese filling and a dollop of cranberry sauce, three on the bottom row with cranberry sauce filling). they are golden brown and slightly shiny. three are more teardrop-shaped than round due to baking too close to the corners of the pan.

decided to make conchas for the first time bc sure why not
photo of a marbled green split-level kitchen island. on the left side of the lower counter sits an unbleached parchment paper-lined baking pan with six evenly spaced balls of dough, and on the right side is a cutting board holding a kitchen cleaver and twelve smaller balls of concha topping (six vanilla and six chocolate). the upper counter has a bag of flour, a mixing bowl, and a measuring cup a round of vanilla concha topping is flattened between two sheets of plastic wrap on a teal tortilla press, which is sitting on top of an electric range. half-visible at the top is a digital clock reading 10:55 because I decided to do this rather than go to bed the balls of dough in the baking pan have been covered with concha topping. it is now apparent that the one in the lower-left corner is markedly bigger than the rest. the top row is vanilla while the bottom row is chocolate, and the topping is scored in a rough shell pattern. (my host has been putting his knives in the dishwasher and has never sharpened them. I'm in the process of amending that but haven't got round to the paring knife yet, so the dull edge dragged at the topping.) the corner of an orange washcloth hangs over the edge of the counter, which looks oddly blue instead of green in this picture for some reason I can't explain because I don't know anything about cameras and don't care to learn six baked conchas sit in the baking pan, which is now lined with a black and white buffalo check kitchen towel, and the rows now alternate between vanilla and chocolate. the topping has cracked a bit in places, and the scoring is very visible on the chocolate conchas because baking them has expanded the cuts. (the same happened to the vanilla conchas, but it's harder to tell because the color of the topping is pretty much the same as the bread underneath.) the topping on the top leftmost concha was a little too big, resulting in a little lip on the bottom that coincidentally makes it look even more like a scallop shell

a bowl of stew including stewed tomatoes, chickpeas, green peas, shredded carrots, white mushrooms, and hot country sausage a loaf of crusty bread that has been shaped by hand rather than in a pan, giving it a squat oval shape. the top has been dusted with flour and scored with three diagonal slashes
