Excellent, a few years back I did work with some people keen to make fresh, unpasteurised sake in England and I saw a real parallel with real ale.

I made malt at home once: edsbeer.blogspot.com/2016/05/home.... We had a pilot maltings at work though so I measured the moisture there. Essentially it's grind the malt finely and compare weight before and after heating to drive off any moisture. Keep weighing till the weight stops changing!

True, if I was reviving Allsopp's I'd make it a regular part of the line up. And though I haven't seen a recipe for it I could have a go a home brewing something similar. £25 for something I'll probably enjoy...but also be disappointed in. Decisions, decisions!
