Sourdough batch 3:
Maple oatmeal!
Porridge: 100g boiling water, 50g oats
120g starter
30g maple syrup
150g water
380g bread flour

This one was a looker, and delicious too!

Sourdough loaf 2/3:
300g starter
700g bread flour
200g wheat flour
650g water
20g salt

One boule, one pan loaf
Crumb was still a little dense and gummy, but an improvement!

Sourdough loaf 1:
100g starter
75g whole wheat
375 bread flour
10g salt
325f water

A little flat and needed another 10 minutes. Underproofed but tasted good!

Starter - 100% hydration, started with rye and moved to wheat when the bag of rye ran out. Her name is Audrey 3, because I always need to feed her!

Left is wheat, right is rye—eventually mixed them up and now I just keep the wheat
