Drain the cauliflower, you can keep the oil and use it again, it’s very tasty.
Blend the cooked cauliflower and all other ingredients until smooth
Pour the mixture into a hot small saucepan and stir continuously on medium heat until the mixture begins to firm and stretch and come together in a ball

Chop to cauliflower up into small pieces or in the food processor, you want to almost rice it.
In a pan wide enough to spread all the cauliflower out in one layer, heat enough oil to cover the cauliflower and cook on medium heat until beginning to brown, maybe 20 minutes

Cauliflower mozzarella;
1/2 head cauliflower
1/4 cup tapioca flour
1 tbsp white miso
1/2 cup unsweetened non dairy milk (or water)
1 tbsp apple cider vinegar
2 tsp lemon juice
1/4 tsp salt

As much as I love my cashew cheeses, I like to be able to provide for everyone, finally I’ve made a delicious stretchy, gooey cheese even my mother could eat, if she wasn’t on the other side of the planet 🥲
