Butternut squash pasta: blended boiled butternut squash with silken tofu and some flavoring and poured it over boiled pasta with some violife shreds. It's pretty good.

Finally getting some nice days here and dandelions are in full bloom, so I made some dandelion syrup and a waffle with dandelion flowers and sorrel! Added a side of purple cabbage and carrot salad. Yum!

Mini pizzas using pita flatbread. Make several at a time to freeze for whenever you want. My go to toppings are impossible sausage, mushrooms, peppers and spinach.

Super easy to make: tofu scramble! Crumble firm or extra firm tofu in a pan with some veggie broth paste and a dash of turmeric for color. Cook until liquid is mostly evaporated. I added frozen spinach, cooked black beans and nutritional yeast near the end of cooking.

I used chickpeas, buckwheat, red lentils, carrots and vital wheat gluten to make these vegan dogs. They came together nicely but I baked them so the outside had a crunchy texture that I was not a big fan of. I also made little "meat" balls with the dough.

Sandwiches are a great way to increase the variety of plants you consume. This green sandwich has guacamole, broccoli sprouts, lettuce, cucumbers and baked tofu on whole wheat multigrain bread.

Can't go wrong with a fruit smoothie! Frozen mangos, strawberries and blueberries with a small scoop of pea protein powder and a splash of coconut cream blended with a bunch of water. I hate drinking plain water so this is a good way for me to hydrate.
