With evenweave you have to be careful with tension and you stitch "over two" so it can be easier to mess up. I prefer the softer feel when working and also the finished look of evenweave so I put up with the fussy nature of it.

I like 32 ct lugana (123stitch.com/item/Zweigar...) which is roughly equivalent to 16 ct Aida. Aida would absolutely be easier because it's so much stiffer and you might not even need a hoop.
