This black bean and ham soup is chock full of vegetables (cabbage, celery, carrots, onion, potato)! A couple of cans of diced tomatoes with chilies really adds the spice… This soup cooked in the crockpot on low overnight and is full of flavor for today’s lunch and several future meals!
