I have made the Coronation Chicken pasta salad. It's one of the simpler recipes. There are sufficient leftovers from yesterday and today that I won't have to cook much next week. Bonus!

Instead we will probably have Coronation Chicken pasta salad. Which is basically, make a batch of Coronation Chicken, boil up 12 ounces of rotini pasta, and mix together.

Alas, they were out of slivered almonds as well so we'll make due with sliced.

I just ordered groceries. I was so excited they had GREEN TOMATOES! I have a wonderful green tomato chicken enchilada recipe.
So I ordered all the ingredients. Which came just now. But no green tomatoes. :-(
Just sadly looking at the orphaned zucchini, chiles, and tortillas....

And let me tell you, even a big bag of spinach isn't enough. A mere two cups is ludicrous.

Go for ALL the spinach!
