apart from the games, there're manga series like Lotus Eater or Forbidden Scrollery. Forbidden Scrollery have official english translations.

apart from bullet hells shmups there are fighting games like 12.3 or 15.5. There's also a bullet hell platformer (17.5)

Touhou 7 is a good entry for beginners, although if you want to get it legally you need to buy a disk. Other reconmendations include 10, 13 or 16, which are available on steam.
