As an aside, the most interesting solution I found for indoor greens was Reichardia picroides ("French scorzonera" or "common brighteyes") because it's a vigorous, weedy perennial that doesn't get bitter as it matures.

Easy winner. Most comparable crops require too much space or specific growing conditions, or have narrower uses. Edible pumpkins might beat them but they're harder to grow in tight spaces with limited sunlight.
