Usually in Game.tscn or through code. It really doesn't matter though unless you are have specific use cases that make either approach less/more attractive.

I also started snake casing node names. Changing this in project settings also helped a lot. My code is all over the place, but consistency is a huge load off my mind and it just allows me to work faster
