I cook my pies at 550 with a well preheated stone, and use parchment type paper beneath the pies for easy transfer on and off. I can check them from above with a flashlight Make about 8 to 10 pies on Saturday or Sunday. I use some pecan wood, some lump coal, but start cooking when smoke stops.

Kamodo Joe, I use a round cast iron griddle holding a pizza stone at the bottom level to divert heat around the sides, then a heavy pizza stone on the top rack.

I purchased a kamodo Joe smoker over 10 years ago. It was a lot of money at the time, but I was convinced by the salesperson at the trusted local outdoor shop that they would honor warranties on their products. They just replaced and upgraded all of the ceramic parts inside my grill warrantied.
