I am a pretty solid cook and I love to improvise.

But if trying new I will usually follow the recipe the first time and then adjust.
Ofc always trust your taste buds when it comes to seasoning while cooking even when following a recipe.
If it's bland it's bland. Ad more salt and maybe spices

I don't make a full fat roux-based bechamel sauce anymore.
Too much fat with the butter for my every day lasagna.

I just use milk and a cornstarch slurry.
Ofc all the flavourings. Nutmeg being the most crucial.
