Update. After troubleshooting, it seemed to be a damaged MAF sensor loom. £20 for the parts. 20 minutes to fit and tape up. Done 2 test drives without any issues. I'll take that win.
I do like being able to fix/tinker with things on cars. It's partly why I'm unwilling to get a brand new one xD
