It's a good rule of thumb, I've introduced some state on backend level then it caused some issues when I tried to scale it to multiple instances and forgot that it was there. If you are absolutely sure you don't want to scale in the future than it doesn't matter I guess

You can get rid of the dishwashers and washing machines, they 'waste' more energy that BTC mining. There are lot of things in modern human life that's 'energy intensive'. But it all comes down to the question: is it worth this energy? And for global base currency answer is clearly YES.

Except other methods doesn't actually secure the chain nearly as much. PoW is the most secure consensus mechanism and it's not even close. Bitcoin is the base chain of new global money, it needs to be as secure as possible and all this energy is not 'wasted', but actually put in good use.
