It grossed me out the first time I did it but it keeps the flavor locked in and the meat crazy juicy. So worth it. Happy roasting!

Soften a half stick of butter on the counter top and mix in your herb seasoning packet. Between the breasts by the neck, there will be a gap between the meat and skin. Smooth out the softened butter mixture under the skin, add a touch of olive oil and salt on top of the skin before roasting
