I looked at the components visible in their video, and I think their mockup ises an old ipad display and an hdmi scanline generator: bsky.app/profile/y2kc...
Ideas on the display:

You might just need to spray contact cleaner in the potentiometers the knobs are connected to; I have an ancient pair of Creative T10s that I revive that way every year or two.
