Snuck some Helles just before it starts lagering. I find the Andechs yeast quite distinctive and wonderful, I just wish it was available all year.

Was crystal clear through transfer line, but only remembered to take a photo post-transfer, so this is from bottle of FV. Gives you an idea on colour. The Aramis has given some wonderful fresh white wine notes.

My Frangelico and Oak Milk Stout scored 43/50, but was clearly on a very competitive table, so didn't place. Happy with the score, but a bit sad as I felt it was my finest brewing and blending of flavours. Good to have some justification.

Celebrating with a British malt (well, almost: some Weyermann Melanoidin and Carafa) and British hop dunkel.

It's much more clear and mahogany than the photo.

Productive homebrew week. Kegged a Munich Dunkel and a Dunkel Weizenbock (should that be Weizen Dunkelbock?), and brewed a Dry Stout, which will ferment in my new toy, a 30l stainless Unitank. Wanted to give it a try as is before buying any more shiny parts, but leaves room for expanding.

Some Gewurz and light toast French oak combs added yesterday. No pellicle in the fermenting beer, which I suppose is a good indication.

Chocolate hazelnut vanilla milk stout. Rounded out a bit. Think the Frangelico and Oaked version is still superior.

Sampling the Irish Red. Wasn't overwhelmed with the chamges I'd made on this at first, but it's growing on me. A shade too dark but condensation and poor lighting aren't helping.

There we go. This has now been racked onto 5l of Gewurztraminer juice and Saison Yeast (WHC Farmhouse Vibes, which I think is Belle Saison) pitched. The Philly Sour has produced some lovely mango/lychee esters, which I hope remain as will compliment the Gewurz perfectly.

PH down to 3.8, sample was nicely tart which is what I'm after. Was aiming for 3.6 so will give it another day before pitching saison yeast.

Makings of a mixed ferm saison today. Cheating a bit with Philly Sour. Have some BR-8 coming from Czech soon (hopefully) and will referment in bottle with that.
