Let me grab you the one I use

Ingredients
Vegetable Layer (bottom and above meat layer)
. 1-2 pounds Eggplant/Zucchini/Yellow Squash . 2 Large Potatoes
Meat Layer
• 2 pounds Lean Hamburger . 1onion diced . 1can Tomato Sauce • 1 can Diced Tomatoes in juice . 2 cloves minced garlic Herbs: Parsley, Oregano, Basil (generous Parsley/Basil, smaller amount oregano) • 1 teaspoon Nutmeg (half in meat, half on Bechamel) . 1/2 Tsp. Cinnamon • Garlic Salt • 1Egg
Bechamel (top layer)
• 1stick of butter • About half cup of Flour • Heavy Cream . Milk . About 1 cup grated parmesan
Steps
There are a lot of things to do here that have to complete at the same time. Do the vegetable layer while the meat mixture is cooking. It doesn't require constant attention like the bechamel does. Try to get as much water out of things as you prepare them, so you don't end up with a soupy mess.
1) Preheat oven to 3509. Spray casserole dish with cooking spray. 2) Cut eggplant and squash into long, flat planks. Place in salad spinner and salt liberally to sweat out juices. Let this rest while you work on the meat layer and the potatoes. 3) Brown ground beef with onions. Turn off heat and drain meat.

4) Return to high heat. Add herbs, seasonings, tomato sauce and diced
tomatoes. Stir occasionallv until all liguid is reduced. Allow this to cool
while you start the bechamel and complete the vegetable layer.
You will whip one egg in a large bowl and mix it with this meat mixture
before spreading it in the casserole dish, so it needs to be cooled
omewhat.

5) Slice potatoes thin and put them in a bowl of water to wash off starch.
You will drain and rinse these to make a layer on top of the meat.

6) Before starting the bechamel, rinse all the salt off the eggplant/squash.
Then dry them as much as possible with paper towels. Blot them
repeatedly throughout the process as moisture rises on them.

7) Lay the eggplant/squash evenly across the bottom of the casserole dish.
8) Make bechamel. Melt the butter on medium heat. Add flour and stir
constantly with a wire whip. Add cream gradually first until smooth then
gradually add milk and let it come to a near boil to make a thick custard-
like sauce. Remove from heat when ready to assemble the casserole.
9) Whip the egg in a large bowl then mix in the reduced meat mixture.
10) Layer beef mixture over eggplant/squash.
11)
Sprinkle a layer of parmesan.
12) Layer the sliced potatoes over this.
13)
Pour over the bechamel, spreading it out. Dust with nutmeg and
sprinkle over more parmesan.

14) Bake uncovered ~1 hour or until browned.

If you want an easy and simple meal that slaps you can try this. It's very popular with the kids. I substitute fresh pesto for the basil/garlic/oil when I have it. 😊

Anyway this is tonight's dinner

Manicotti Style Baked Penne

Equipment: Large mixing bowl, spatula, colander, lasagna pan 9 x 13

ngredients

• 1lb. Penne
• 2 Cups Ricotta
. 1egg
. 1Cup Heavy Cream
. 3 tsp dried Basil
1.5 tsp dried Oregano
• .5 tsp Garlic Powder
. 1 tablespoon Garlic Paste
2 tsp Olive Oil
• Large pinch Kosher Salt
Black Pepper
• 5oz.grated Parmesan
• 12 oz. Mozzarella
. 1 jar Rao's Marinara (24 oz)

Steps

1. Preheat oven to 350°F.
2. Cook penne al dente and drain.
3. EXCLUDING THE MARINARA, mix all other ingredients in a large mixing bowl
and allow to rest while pasta cooks.
4. Fold pasta into cheese mixture and coat noodles.
5. Spread pasta mixture in 9 x 13 lasagna dish.
6. Spread marinara over the top.
7. Sprinkle the top with mozzarella and a little more parmesan.
8. Bake for 25 minutes.
9. Broil for 2-3 minutes to brown the cheese.

I'm switching to oatmeal for breakfast in the winter.

Turns out you can put an egg in oatmeal. Not only is it more filling, but I think it helped keep from boiling over in the microwave.

You can also put flavored creamer in. It doesn't take much.

Turns out they'll just let you do anything.

• 1/3 cup rolled oats
• 1/2 cup milk
• 1egg white or egg
• 1/4 cup chopped fruit (optional)
• optional toppings: cinnamon, nut
butter, seeds, chocolate chips

INSTRUCTIONS
1. Combine oats, milk, egg/egg white
and fruit (if using) in a bowl and
mix well.
2. Microwave for 45 seconds.
3. Stir well.
4. Microwave another 30-60
seconds.
5. Top as desired and serve warm.
