This is a good example of the two different types of hardneck garlic I grew: one head of MarJean at the top and 2 heads of Northern White at the bottom

These aren't quite dillybeans, but they're very similar texture-wise, just more garlicky. Garlic scapes are the green growth and eventual flowers of hardneck (spicier, usually) garlic that growers trim so the plant focuses on the bulb. Basically, they're like... AsparagusxLong BeansxGarlic.

Hi resident garlic aficionado chiming in: the giant bulbs have much milder flavour than your normal mass varieties, so it’s going to be very difficult to overdo it! your usual hardneck varieties have 4-6 cloves, so that’s three bulbs, except I would use four because of the milder flavour.

Yeah, I've got two different kinds going. These ones are in the ground, underplanted with a wild rose. The other ones are in a little raised bed and they're not coming up yet.
One is hardneck and one soft, but I won't remember which is which until harvest time.

Thoughts for garlic thots:
In summer, try making a puree of garlic scapes from hardneck garlic, incorporate into butter. You can make "butter cakes" that you can freeze individually until you need them. I've also done this with chives & chive blossom.

Things that survived: lavender (3rd year now), one of the salvia, the two hardneck garlics, the dianthus (looks rough though), both strawberries (3rd year now), the cornflower I got in wales, and some of the herbs in the border.
It’s not much but it’s a start.

A weather forecast only garlic could love. (Hardneck garlic needs periods of cold, preferably some sub zero, to properly segment and prepare for growth in the spring. It's called vernalization)

Apparently I've made a habit of whining about softneck garlic whenever I deplete my hardneck reserves. I'm nothing if not consistent. (But that year I made it till February! And it's not even December yet… ☹️)...

I'm a 100% hardneck girl, I want those scapes. Metechi and Duganski look gorgeous, kind of like the Chesnok Red I've tried before. This year I did Music & it just blew everything else I've ever tried out of the water so I'm sticking with it. It's not as pretty but I can't argue with fist-sized heads
