I found a new supply of makdous--yes--and bought several jars because nobody sells them for long. But it's expensive, and I know I've made it before from eggplants and peppers that I've grown, so it's probably time to revisit that idea.

Oooo, you'll have to let us know how they turn out! I also LOVE Lebanese food! Funny, the site I found (and their recipe) didn't even mention pomegranates tho it seems, from your earlier skeet, that there may be subsets of makdous'. 🤔

Lunch for two at Ayam Zaman in Shepherd's Bush. Fattoush, fu'ul with tahina, aubergine makdous, spinach fetayar, two pots of Moroccan mint tea, one glass ayran, flatbreads, complimentary baklava, everything v. good to excellent. £40 before service. And we over-ordered, we didn't finish it all!

Here's the deal. The recipe was called batinjan makdous. Part of the FILLING contained pomegranate seeds.

I'VE FOUND EVIDENCE THAT SOME PEOPLE PUT POMEGRANATE SEEDS IN MAKDOUS. ❤ That said, I'm still in between putting cilantro and peppers in the filling, or just making shatta and using that, in there. Whatever decision I make, I'm starting the cleaning and draining process of my baby eggplants, today!

In exciting news I’ve finished off the condiments I started on Monday. The Shatta (chilli condiment) needed to sit in the fridge for 3 days before adding the other ingredients & the Makdous (preserved aubergine with walnuts) needed some Shatta added before I could seal. I have to wait 12 days now

In exciting news I’ve finished off the condiments I started on Monday. The Shatta (chilli condiment) needed to sit in the fridge for 3 days before adding the other ingredients & the Makdous (preserved aubergine with walnuts) needed some Shatta added before I could seal. I have to wait 12 days now
