Thanksgiving is fundamentally not a desert holiday for me. It’s a carb load, sugars are taking up too much valuable space.

It's not that you can't have dyes. Sugars. Artificials.
It's just that they need to be in moderation, in a minority, compared to a mostly healthy diet.

I spent a week in hospital trying to bring my blood sugars + ketones down. Wired up to an IV full of insulin, glucose and potassium with everyone trying to reassure me, but everything being a blur at the same time. Why me? I remember thinking. How could I be diabetic?

Okay I have epilepsy

Stopping caffeine today even though I was on small doses.
Cutting out all sugary treats, chocolate, cookies.
Many carbs break down into sugars on the body.
Have to live like a monk.

And what's wild is that this is the second time I've made them so I used like 2/3 of the dates in the recipe and it's STILL TO SWEET this thing is a sugar bomb 💥

I just had 15g of fat of which 2.5g was saturated fat, 130mg of sodium, 7g of carbohydrates, 2g of fiber, 3g of sugars of which 2g of added sugar and 7g of proteins and it was delicious.

I was woken up by my insulin pump bright and early this morning, telling me I needed to change the clock on it as the time change was here! At this point for some dumbass reason my blood sugars wouldn’t go below 170 mg/dL and I couldn’t get back to sleep. Diabetes tech for the win!

Okay, I’m sharing the recipe but keep it safe.
In order put in
1 cup of palm jaggery or healthy sugars
Loads of butter and 2 eggs & orange juice
Whisk them well
Add 2 1/4 flour, 1 tsp baking soda
1tsp vanilla extract.
Stir them with a SPATULLA. Don’t overstir.

Mine came from somewhere online. Brown sugars are usually my choice, but I made a pear chutney earlier this year that uses white and it looks stunning... a pale pinky sort of colour.

The original recipe came from a magazine. I've played with it this year, as I had a lot of apples to use, and had to put some dried cranberries in to make the weight up, as the ones in the freezer fell short.
This recipe uses soft brown sugar, and I'm quite fond of using darker sugars.
