Always remember that you'll end up with umpteen litres of the finished beer at the end, so I find erring on the side of caution best.

My Brett beers so far have involved making a regular beer - then instead of bottling it, transferring it to a 2nd fermenter with the dregs of my last Brett beer in. Leave for another week & bottle.

After 6 weeks it's lovely. After 12 weeks, it's still nice but the Brett dominates everything.

Tonight's beer is the bastard child of 1 litre of NZ brut Jasmine IPA mixed with 1/2 litre of honey, jasmine & Brettanomyces beer.

Boy does a little Brett go a long way.

Fyne Ales seem to be the front runners in making wild ales in Britain with an amazing variety of fruit, herbs & microorganisms going into some of their amazing beer.
