The pita that are meant for filling with be very puffy and softer than others

If they are “pocket-able” you usually only need to cut them in half and the interior will be kinda of separated and you can pry them fully apart with a butter knife.

I made pita bread and then split them. It’s a temperamental process that doesn’t always produce pita that creates a pocket (six of eight worked fine for me) and I’m not sure what brands have a pocket for filling in your area

Of the eight pita I made six properly puffed up and were “pocket-able.” I don’t make pita often, so I consider that a win.
