The thing about a traumatic past/childhood is that it kind of disarticulates you from your emotions and it takes me 8-10 business days to understand whether I’m upset, sad, anxious or angry and why and I’m getting better but it’s so weird to feel like this midlife

As a new Englander the most traumatic part of first experiencing Southern cuisine was learning what table syrup was. We mostly got fake in my house growing up (Jemima, Butterworth, etc) but the stuff they give you at Waffle House is so much worse.

There are different grades! (Maine here) Golden, light amber, dark, and very dark. Depends on how far into the season it's tapped from the trees. Flavors are very different- I'm a dark man myself.
