If you have an instapot (or real pressure canner) and you aren't saving bones from dinner scraps to turn into bone broth, what are you even doing? Collect in freezer bag until you have enough to run a batch. Toss in vegetable peelings/scraps, onion, garlic, etc.

Really cool to see the Nest Gen 1 & 2 liberated however I take issue with many calling this "open source".

The firmware is not open, no patch history for the binary files, and the API is hosted by a third party with no option to self host. Hopefully this is changes.
