Replenished my roux supply. A nice golden brown... the promise of many curries and gravies to come.
I save leftover fats from cooking until I have enough, then cook them with flour and stir stir stir... now i can freeze it in chunks to use for the next few months.

Wanted to use up some tofu, anchovies, and the last of this year's jalapeños. Marinated with lemon, honey and coriander. A sauce of roux, garlic, a little carolina reaper, and star anise. The anchovy is strong, I could almost believe the tofu was baccala. Extremely satisfying.

I played Ecco the Dolphin. It was a profound experience for me! Very unique game. Compelling concept. 💎(((🐬
Due to the difficulty, I think few would enjoy playing through to the end, but maybe most could enjoy playing for a few hours without that goal.

Well, my tenure as a school bus driver has ended. I enjoyed looking after the kids, a lot of interesting problems there. I kinda liked driving a big bus. It seemed like good honest work... but wages were a shell game, with constant pressure to work for less than promised. 🚌💸
