i typed this out on my notes app but this is the flan recipe i used after consulting my cousin and my tio about what they do. this is how i make my flan and my preferred version! there are definitely other variations.
a recipe for cuban flan ingredients: for the flan - 1 can condensed milk - 1 can evaporated milk - 1 WHOLE egg - 5 egg YOLKS - 1 tsp (~ a cap) of vanilla extract for the caramel - 1/2 cup of white sugar instructions: 1. In a small saucepan, start your caramel. Sprinkle a small amount of sugar to start, and melt at a medium to low heat. As sugar melts, add more (~ 1 tbsp). Continuing melting until the sugar turns a nice rich amber color and make sure to stir to avoid burning. Once your initially few scoops of sugar (about half of your 1/2 cup) have melted into a liquid, slowly add the rest and stir into all of the sugar is melted and that nice amber color. 2. Pull off heat and IMMEDIATELY pour your caramel into your flan dish (I wish an 8x8 round aluminum dish you can find at a grocery store but you can use a cake pan as well). Move the caramel around so that it coats the whole bottom of the dish, make sure to be quick. 3. Set this aside and start your flan. 4. Preheat your oven to 350 degrees F. 5. In a large bowl, combine all the flan ingredients together and mix well. DO NOT OVER MIX! Gentle mixing is best as adding air to the mixture will cause bubbles to form and we don’t want that. 6. Once everything is mixed, pour your mixture into your pan with the caramel. 7. OPTIONAL: you can cover your flan dish with aluminum foil. I don’t but my cousin does. All this means is you will have to be vigilant on how long you bake your flan. 8. Create your water bath - the most important part of this is to NOT get water in your flan mixture. The way I do this is by setting my flan pan into a larger, deeper baking pan. Place this into the oven and with a water pitcher, slowly pour your water into the outer baking pan. This helps avoid water entering the flan mixture via transfer. Make sure you pour enough water into the larger baking dish that it reaches about halfway of the OUTSIDE of the flan dish. 9. Bake your flan for 45 minutes to 1 hour. Mine usually takes about an hour. You want your flan to not be liquid in the middle, but a jelly like bounce. 10. Once baked, remove flan and the water bath from the oven. DO NOT remove the flan from the water bath. Let the flan rest as the water cools for about an hour. 11. Once rested, remove the flan and store it in the fridge for at least 4-5 hours, although overnight is preferred. 12. When serving, run a knife along the edge of your flan and the pan to loosen it up. Place a plate much larger than your flan pan on top. CAREFULLY flip your flan on to the plate by holding both together and flipping in one smooth motion. The caramel will seep out - it is supposed to! 13. Enjoy! :)
