I’m asking because I got the Switch 1 version of Re-Pac 2 first, and when I get my Switch 2, then I wanna get the Switch 2 version of the game aswell, as I’m certain it’ll run better.

Performance Mode does absolutely nothing to fix this, all it does is just make the graphics worse.

I'd say the worst way to play PMW2 Re-Pac is the Switch version.
The game's capped to 30 FPS and there's an input delay that really takes a toll on your performance. It's not good for a game that requires such precise platforming.
