Today, attempting to recreate my fave salad of all time, avocado, butter bean, quinoa, tomato, red onion + fresh lime juice.

I’ve given up on ever finding physalis / cape gooseberry ever 😭, so will try a mango coulis with it instead!
This is a picture of the above salad from a recipe book called Ceviche. You can see the salad plated
Into a stack, with dribbles of yellow coulis on the side. The plate looks like a natural ceramic on (rather than stark white).
The stacked salad is green, browny grains with butterbeans and coriander flecks, and the tomato and coriander is cut up very finely and stacked gently on top.

My lovely mum has offered to buy me a sewing machine any times, I always declined after seeing her and my auntie’s stashes of fabric never used. I wouldn’t be able to help myself!! 😊

When I was heading to Middlemore a bit I remember they had painted lines on the floor directing you where to go, so simple and better than random signs on walls occasionally. I’ve managed to get lost in starship just trying to get an X-ray sorted.

I was an 18 year old on the benefit. I’d crashed out of school with 4 school cert subjects, and living away from home. I was applying for any admin job I could, and sent myself on a computer course to certify skills I already had.
I needed a leg up, a hand from up the ladder, not a push backwards.

- applied for f/t retail job, was “interviewed” via AI/video 🤯, didn’t get job

- applied for p/t retail job, was one of 3000, didn’t get job

- got short-term gig shilling vapes in malls (required own transport + lots of driving)

Absolutely f*!# this noise. I did a clinical trial for the RSV vaccine while pregnant 8 years ago to help stop the huge amounts of babies hospitalised for it - this is awful, and dangerous, and will absolutely inflame dropping vaccination numbers. This is absolutely awful.

Needed a bit of sunshine today. Very much missing my garden full of freesias and daffs and tulips
