Been thinking about this for a few days, and I think I've now got it straight in my head. Red Dwarf, which has 2, possibly 3, AI's. In theory Holly, an AI with an IQ of 6000 was a useful part of the ship while they were a tool, but the exact second they had to make a decision for themself, they failed. The reactor leaked, the captain died, and Holly accelerated out of the solar system, and forgot to stop accelerating for 3 million years. They woke Lister once it was safe and once Lister had an isolation breakdown they simulated Rimmer because he was the one who'd interacted the most with him. Given they've now had an eternity to "grow" on their own, you'd hope there was a benefit, but other than watching stellar events unfold, they've had no new input, and essentially go senile as their model corroded due to lack of input and/or useful feedback. Similarly Kryten, again a useful tool, was great until the Nova 5 forgot to keep an eye on what he was cleaning and he broke the navigation system. He then looked after the survivors the only way he new how until long after they'd died. Lister then went out of his way to treat him as a person with agency, and over the course of the series, he then becomes a lot less dangerous, but still is a with crew member with value. Rimmer is tricky, as on paper he is an LLM/Chat GPT version of his living self, but is, similar to Kryten, able to break his programming to an extent and grow. He's still a total git, but he's seen how by repeatedly being "him" he'll continue to fail, and being Ace he'll "win", but it's only on a few occasions he actually allows the Ace through, principally because there are so few examples for the hologram simulator to work with. Or something. I really like Red Dwarf.

The Never Ending Story and Das Boot were directed by Wolfgang Peterson. TNES came first, which makes sense when you consider that Peterson had to learn how to rip an audiences’ hearts out 😭😭😭
