Ah, great idea! I will do that with my red tomatoes. With these yellow ones, I’m going to sauté shallot, garlic, ginger. Roast tomatoes to soften them. Add a curry blend, put them through the food processor, stirring some cilantro, then I’m going to can it. Add veggies, coconut cream voila!
