Thought I would try #Sunchokes 🌻Roasted @425F for about 20" & wow!! They are soooo good! 🌻Tried not to eat too many because internet said they were very fibrous. Raw, they cut like jicama. Then roasted, taste like a creamy white potato with sweet notes that melt in your mouth! #Vegan #VeganFood 🌻

Made a #VeggieWrap 🌯 using some #Tortillas that I found at #NaturalGrocers with pretty clean ingredients!! Roasted some carrots and added artichoke hearts, onion, olives, chickpeas, avocado and other veggies I needed to use up. Super yummy!! 🌯 #Vegan #VeganFood #VeganMealPrep #VeggiesRock !!! 🌯

I found some Chestnuts 🌰 to try roasting in the oven. I've never roasted them before so I found instructions to roast at 425F for 25-30 minutes. I think my oven was too hot so next time I will lower that a bit. 🌰 Yummy and fun!🌰 #Vegan #VeganFood #VeganTreats #Holiday #Chestnuts 🌰 #VeggiesRock !

Made a yummy Cream of Mushroom 🍄🟫soup,, cashew cream based and recipe from twospoons .ca . Found Spring Rolls w/Tofu @ Trader Joe's. Had never seen them before so we tried them! Pretty good & cashew sauce was good too.

Tried Blue Zones Kitchen 🌶️Spicy Sweet Hawaiian Bowl 🍍🥥 All the meals from them that I have tried have been really delicious but you have to catch them on sale for sure! The rice does have a sweeter taste from the coconut and pineapple but not too sweet 👍🏼 #Vegan #VeganFood #BlueZones #VeggiesRock !!

Tried another from Hummus Goodness, this one is Tac-Oh ! 🌮 Really good! Tastes like taco seasoning but not overpowering with the cumin,,just creamy hummus with a nice taco flavor 🌮 I can see using this in a layer dip or other recipe. It is very good. #Vegan #VeganFood #Taco #Hummus #VeggiesRock ! 🌮
