This is a new favorite at the house - we call it dirty mac n' cheese, or marry-me mac n' cheese, depending on who's asking. Check the alt text for the recipe.
Ingredients: - Boxed mac n' cheese of choice (we use two boxes) - Sweet White Corn - Mayonnaise - a good scoop of this - Spices (to taste) Granulated garlic (1/2 to 1 tsp) Granulated onion (1/2 to 1 tsp) Cayenne pepper (a little of this, maybe 1/4 tsp Chipotle chili powder (a lot of this, probably 1 tsp or more) Paprika (optional, to taste) Salt (14/ tsp) Black pepper (1/2 tsp) - Sour Cream - more sour cream than mayo, a good dollup - Cotija cheese (crumbled) - Lime Juice Steps: 1. Make the boxed mac n' cheese as you would normally 2. While that's cooking, place the corn in a 4-qt sauce pan, and stir in the mayo 3. Add all of the spices and stir again. Let that simmer on a medium-high heat until the mac n' cheese is done 4. Now add the big dollup of sour cream. 5. Dump the finished mac n' cheese into the sauce pan and stir that up. 6. Let it sit for a bit 7. Squeeze lime juice over what's cooking in the pan, but not too much! 8. Add the crumbled cotija cheese to the top and let it sit a bit longer 9. Now is the time to take a spoon and try a sample. You can adjust the spices now. 10. Give it one last quick stir and it's ready to serve.

Sometimes I have to wear a goofy hat to check-in with my brain when something’s not feeling right, or bcuz medical insurance says so. The EEGs confirmed I still very much have epilepsy, but the good news is that my anti-seizure meds are working to keep my seizures from showing up on the outside. 👊🏻🧠💜
