IMO, brisket is the most forgiving of the meats. The Amazing Ribs link I provided will give all kinds of info on what needs to be done.
Also, if you get some smoke flavor on the thing (like 3-4 hours) and you're in a panic, throw the fucker in the oven, crutch when needed.

I do something similar, but mine's a "we are having this dish, no questions asked." Her mac & cheese. It's more a dump casserole mac, a good chunk of the family can't have gluten (we have another mac for them), but it's staying, dammit.
