Absolutely. Cooking is something that recharges me and I love the process of cooking as much as eating the final dishes. I think the key is to connect with things we enjoy partaking in and refusing to let them take what has meaning and gives us pleasure.

We bought a lamb from a local farmer earlier this year, which makes it quite affordable, if you have a freezer (which we do, bc we already buy half a cow. This is our annual supply of meat for 6 people.)

My favorite way to make leg of lamb is slow-roasting at 300F for 4-5 hrs, fat scored, salted + spiced, covered, with broth in the bottom of the pan. Then remove cover and roast 325F for 45 min, then broil the fat until crispy. Let rest 30 min. Falls off the bone. The drippings make the best gravy.

One of my favorite things is to make a fancy dinner for no reason other than we are alive and we get to have pleasurable experiences.

Tonight, I made a spectacular roast leg of lamb, squash + peas, and a tomato salad (the last from the garden).

Joy, pleasure: these are resistance, too.
