Well what else can you do? Once you get the broiler flipped so it's below the skin side down fish you are in fine shape with the meat protected etc etc. Couple of hours work on inverting the broiler and you're golden.

According to AI, I should cook salmon fillets skin side down so the skin, which is now under the salmon meat, will protect the meat from the broiler overhead. Also, cooking skin side down is ideal for fillets that have no skin. Who knew?

This is a "small plate" at a local (very good) Mexican restaurant. It is roasted sweet potato. Each chunk of sweet potato is roughly the size of an 8yo's fist. No wonder we're all so fat.
