Problem is, I can't figure out what I could offer in return for sub/donation goals...

I cannot recommend MixItUp enough
There is so, SO much you can do with it, and it can handle some pretty complicated tasks, all without using Generative AI.
You can set up your own chains of events for certain redeems or chat commands, set up unique triggers for dozens of different events, etc.
