I did away with the blender, the stove, and the need for an ovenproof skillet with a tweaked formula that makes the most reliably billowy and dramatic Dutch baby pancake yet. It's so easy we can -- and often feel like we do -- make it in our sleep.

My favorite blondies are quick, one-bowl, require no butter to be softened or advanced planning, and are infinitely adaptable with chocolate or nuts or dried fruit or any kind of chopped leftover candy. They are exactly perfect for a snowy weekend.

My spin on blissful lemon potatoes is all I want right now. They're crisp at the edges and almost melting in the center with pan juices that reduce to a sticky, intensely flavored concentration.

A one-pan pasta with broccoli that's intentionally cooked longer, so it's tender, almost silky, and you can really taste the olive oil, garlic, and lemon. It's a bowl of warmth; perfect for this bitingly cold week.

New: The simplest, fuss-free skillet pan pizza with a thick, airy dough rippled with blistered cheese on top, and browned to a seasoned crouton-like crisp underneath, the kind that makes an audible crunch when you cut through it.

Today's Smitten Kitchen Digest is a love letter to citrus, which has the good manners to be in season right when we need it most (such as this icicle of a January week). Salads, pasta, chicken, classic lemon bars, and the best grapefruit cake in the world

This is turkey meatloaf (for skeptics) with crushed, ranch-y potatoes were a surprise hit of Smitten Kitchen Keepers, my third cookbook, and couldn't be more perfect for this arctic day outside.

This fudgy one-bowl double chocolate banana bread is here to ruin you for all other banana breads and cause you to repeatedly buy too many bananas ("oops!") for the express purpose of letting them soften to the point that you simply have no choice but to make more

A profoundly perfect crumb cake -- the only kind worth making -- comes in hefty squares with at least as much height from big brown sugar and cinnamon crumbs as from a golden, buttery, sour cream-enriched and vanilla-scented cake. I've got you covered.

Crispy potatoes heaped with buttery sautéed mushrooms and onions, finished with dill and served with sour cream is one of my favorite Russian comfort foods, and this today's artic blast couldn't be better timed to delight in it.

A simple soup palette with a variety of crispy, salty, and creamy finishes that make soup nights more fun. Yes, I just said fun. About soup. This one is!

Occasionally (ahem, frequently) I realize that it’s time for dinner and nobody (else) has made it — the dinner frittata is here to save the day. This hearty one from @justinchapple is a longtime favorite, perfect for an overcast day.

It has always been too long since I last had a really spectacular homemade key lime pie. It tastes like an in-kitchen vacation, especially on a cloudy day, and this one is a cinch too. We really, really should.

A quick skillet chicken with a soy sauce reduction that gives the cutlets a lacquered glaze. This is such a family favorite that it's gone in the regular rotation. We serve it with rice and a quick vegetable slaw.

In this week's Smitten Kitchen Digest, we're celebrating beans, beautiful beans, with a collection of recipes that could turn anyone into a bean enthusiast. This collection also includes recipes with chocolate and/or coffee, as both are bean-derived. ✨

I recently gave my 2008 lemon bars — the classic bakesale kind with a bright, tart lemon layer on a buttery shortbread crust — a revisit and now they’ve got a better texture, deeper flavor, and fewer steps. Time to fall in love with them all over again! 🍋

These "melts" are essentially a mushroom croque monsieur -- here atop sourdough with a schmear of Dijon-rich bechamel, a great pile of sauteed mushrooms and cheese that melts over the top and onto the baking sheet, to be lifted off in crispy flakes.

My favorite oatmeal pancakes, simplified and streamlined but as perfect as ever: hearty and flavorful, with leftovers so good, I always make a double batch.

Quick, one-bowl, mixed by hand, fragrant with vanilla and brown sugar, and exceptionally well-studded with chocolate but a little rumpled too. It's a need, not a want.

These tacos have been a stealth archive favorite for over 15 years now -- they seem so simple but they hit all the perfect weeknight dinner notes with a quick black bean filling, easy slaw, and pan-crisped taco shell we should never be deprived of. Dinner? Sorted.

An unbelievably cozy, comforting dish that’s heavy in our dinner rotation because the ingredient list is short, the chicken tender, the rice flavorful, the leftovers reheat phenomenally, and it’s budget-friendly.

Rules are rules: Cold, cloudy winter days require grapefruit cake. This 2007 cake felt defiant at the time, celebrating grapefruit instead of the usual lemon, but remains a beloved January fixture in my kitchen, perfectly crumbed and not too sweet.

One of my favorite things to make when I think I don't want to cook: spaghetti tangled with intensely seasoned crunchy breadcrumbs and a broken crispy fried egg comes together as a quick, perfect bowl of undiluted comfort. Monday dinner agenda, set.
