Chop all vegetables
Saute veggies in a splash oil
Add remaining ingredients, bring to a boil, simmer for 15 mins

1/2 cup uncooked quinoa

3 tomatoes
2 cups pumpkin
1 red & 1 green capsicum
1 carrot
1 onion
2 cloves garlic
1/2 tbsp chili powder
1/4 tsp cayenne pepper
1 tsp ea salt, pepper, turmeric, cumin, oregano

Vegan Eggnog 🍹

3 cups non-dairy milk of choice
1/2 cup soaked cashews
1/2-1 tsp ea cinnamon, nutmeg, ginger, clove
1/4 teaspoon sea salt
2 tsps coconut sugar
1/2 teaspoon vanilla extract

Blend all ingredients. Garnish with cinnamon & star anise 🌱

Method

Blend cashews, garlic, yeast, salt, onion powder, garlic powder, tomatoes, jalapeños
Pour in stock, blend till smooth.
Can be served warm or cold, as a sauce, dip or spread 🌶 🌿
