The goat Gouda I reviewed this week I think was on a shelf since last year!

I tend to get cheeses that are pretty old. The Alemar should have been eaten months ago.

It's reportedly a seasonal cheese available only late in November and in December; this must have been sitting somewhere a year!

L'Amuse "Black Betty" Brabander Reserve Goat Gouda

Semi-hard Dutch 🐐🧀. Sweet milk aroma. Has crystals from aging. Strong butterscotch sweetness, with typical Gouda nut flavor and a saline tangy finish that isn't goaty. A bit hard and dry near the surface. An excellent untraditional Gouda.

Sawtooth from Cascadia Creamery

Semi-soft Washington 🐄 🧀 with washed rind. Yeasty, musty aroma. Strong, complex flavor, funky, savory, a touch of salt. Full, coating mouthfeel. Develops creaminess as it sits in the mouth.

Brigante (Classic) from Pinna

Semi-soft Italian (Sardinia) 🐑🧀 with thin wax coat. Delicate milky aroma. Pleasant fresh cheese flavor with a touch of caramel. Develops a bit of sharpness in aftertaste. Available in flavored varieties.

Apricity from Alemar Cheese Company

Soft Minnesota (last cheese before move to California)🐄 🧀, acid coagulated, with bloom rind. Slightly yeasty aroma. Lactic tartness leads, butter and fermented fruit follow. Fluffy, fudge texture, melts in mouth. Had a very old sample.

Caña de Oveja from Mitica

Soft Spanish 🐄 🧀 with bloom rind. Unlike the goat version reviewed earlier, this log has a more solid, almost chalky, center. Earthy aroma, very lemony flavor.

Soft French 🐐🧀 log with bloom rind. Soft and mild, buttery, typical goat tang. There's more going on, but frankly, I'm confusing it with the next cheese I review.

Buche de lucay as purchased in clear plastic wrap. It is deformed from storage. There is a wrinkly outer surface and a soft paste that is yellower than in the ad.

St. Stephen from Four Fat Fowl

Soft New York 🐄🧀 triple crème with bloom rind. Over-aged, this had a liquid interior. Triple cream has silky texture, milky flavor. The rind gives a complex aftertaste of mushroom and earth.

Fromager d'Affinois Brebis from Guilloteau

Soft French 🐑🧀 with bloom rind. I loved the triple creme cow version I reviewed; this sheep is more like a richer Brie, melting on the palate, with some texture from the rind. Did not have enough for a fair assessment.
