That NYT article about “two Minnesotas” was definitely…something. I wouldn’t really give much weight to the opinions of people who 1) don’t live here 2) don’t visit here and 3) are drinking whiskey at 10 AM on a weekday, but that’s just me.

Gruyère and fontina in the sauce, sharp-ish cheddar grated in with the noodles, Parmigiano Reggiano with the Panko on top. Cheddar should be about 12-18 months aged, any older than that will break and get oily. Tillamook 15 months aged is my go-to.

Today in good news, I found an injured hawk outside my store this morning. I called the Raptor Center and animal control picked them up in five minutes! I’ve waited longer for Lyft. Get well soon feathered friendo!
