I used to work just off Minge Lane and the sign was always getting knicked, looks like they have a solution now.

An example of the need for standarisation with Precautionary Allergen Labelling. PAL statements on front and back of pack don't match. Tuk In Foods. I work in the industry and I still find this sort of thing confusing. #foodallergy #PAL

What did I learn from my experiments with extractability of Walnut protein 1- you need an additive to negate the polyphenols in the kernel membrane 2-it’s ok to challenge the literature (high salt buffer not work) 3- defatting not affect protein detection. 4- this work still excites me after 22yrs

Yep Buffer C seems the best at getting the protein out of Walnut #foodallergen

Buffer C appears to be the best according to the BCA assay #foodallergen

Performing a good old fashioned experiment today, which of these buffers can extract the most protein from whole and defatted Walnut……. #foodallergen

Well I have been developing food allergen analytical methods for 20 years now, I feel that only now, after all this time the pieces of the allergen management jigsaw are finally coming together. Here is me and my huge column from 2005 separating out walnut proteins😀 #foodallergy

I talk a lot about the allergen analytical community, it's a vibrant community that aims to share info and help each other with the goal of making safe food for everyone. But we do occasionally have a bit of fun. The picture was a little after hours at
