T cells, APCs, B & epithelial cells drive CeD. The Exact immunologic sequence is unknown. HLA-DQ2 & DQ8 are essential. Without DQ2 and DQ8, CeD is (mostly) ruled out.

Vanderbilt developed a method to determine which regions of peanut protein bind to antibodies that trigger reactions. They then generated antibody variants that disrupted the process. This method could potentially be applied to other allergens. #foodallergies

My 2 year old has life threatening food allergies that make daily life challenging. Now I have to check daily that a commercially available product isn't going to kill him. The FDA is there to protect consumers like my family. Cross contamination or bad labels could have devastating consequences.
