If you wanna get real jazzy with it, make the basic recipe but increase the honey to a tablespoon, add 1/2 tsp each onion powder and smoked paprika, 3 cloves of ROASTED garlic and 2 tablespoons minced fresh chives

For example, red wine vinaigrette you would use red wine vinegar and add a minced shallot and herbes de Provençe to the ingredients.

Italian vinaigrette you would use white wine vinegar and olive oil, and add 2 cloves minced garlic and a teaspoon of Italian seasoning.

Throw all that in the food processor, and blend till it incorporates.

You can add 1/4 tsp xanthan gum (available in baking aisle) or soy lecithin (health food store or Amazon for the liquid kind) to keep it emulsified so it don’t separate. This is just a base recipe you can tweak as desired

1/2 cup oil (you can use olive oil if you like it, more neutral ones like almond, canola or grapeseed if you want a lighter taste - DON’T use corn oil)
1/4 cup vinegar of your choice
1.5 tsp mustard
1 tsp honey
Salt/pepper to taste
