🎃 They are next to my homegrown corn 🌽 and beans 🫘, following the Native American tradition of planting these “three sister” plants together for natural soil health and pest control. I’ll probably put some mulch down in the coming days.

(My oven is old, so I checked on them regularly.) They obviously don’t taste the same as potato fries, but they do have a pleasant natural sweetness to them, and they’re also extremely filling. For protein, I made an open-faced chicken salad sandwich on Danish rye bread topped with arugula.

Roasted them in the oven for about 45 min at 425 Fahrenheit, then broiled them for about 5-10 min before serving.
